Why Coconut Oil turns Solid in Cold

Normal coconut oil, Refined Coconut Oil, Virgin Coconut Oil, All types of coconut oils (except MCT Coconut Oil) start forming snow flakes like particles, white chunks when the temperature drops down below 22 degrees Celsius (71 Fahrenheit). This is the natural property of coconut oil. Though it looks so ugly and unpleasant to the eyes, it is the natural behavior of coconut oil when the climate or room temperature is cold or air condition is on.

But Olive oil or Sunflower oil does not turn solid. Why is this?

Olive oil and Sunflower oil is made up of different types of fat which are called as Unsaturated fats. So they do not form solid particles when the climate turns to winter of cold air conditioned room.

Virgin Coconut Oil is made up of Saturated fats. So it is the natural property of saturated fats to clog into solid particles when temperature becomes cool. This does not happen to MCT Coconut oil because all the fats in MCT coconut oil are medium light weight saturated fats. So they do not make solids since they are small sized fats.

Finally it is natural for Virgin Coconut Oil and all coconut oils (except MCT coconut oil) to turn into a solid ice cream like substance in winter or in cool temperature.
